Key Lime Cookies
If you’re new here, Hello! A warm welcome to you. If you’re not, then you know how much I love key lime everything. Pies, bars, cups, you name it. And for so long I’ve wanted to make this into a cookie flavor. On my instagram stories, I’ve posted outcome updates frequently. And after failure, failure, and more failure, I finally got it right. And look at it…. it’s so beautiful
First, I wanted to put the filling on top instead of stuffing the cookie. But the cookies would spread too thin. So that idea was out. When I adjusted the butter ratio, they were too doughy.
Well… now it’s time to change the whole thing. So I did. Then, I couldn’t get the right texture once the dough had graham crackers in it. I wound up crumbling them and tossing them in with the dry ingredients. It was a hit. Hurrah! Finally, I had made a dough that was sturdy enough to hold the filling. I worried that it wouldn’t work out as the filling would get hot just to be chilled again, but it didn’t really affect the outcome. Once everything was going well, I drizzled the cookie with some white chocolate and topped it off with a Rafaello.
